Winter is upon us! The days are shorter, walks are a bit brisker, and here at Thistle We’re prepping brand new meals to keep you warm and nourished. Continuing with our dive into full-bodied flavors of the changing seasons, we are layering up with warm spices, bold flavors, and exciting spins on your favorites.
More than 20 new meals and returning favorites are dropping on our winter menu, perfect for kickstarting your health into high gear for 2025. Think of it as your healthy (and tasty) resolution.
Hearty Winter Meals for Comfort and Flavor
Unicorn Bowl
This salad may just be the cure for the winter blahs. Chef Kathleen Nio has created a lunch that is as vibrantly colorful as it is delicious. Our vermicelli rice noodles are given a beta carotene boost with beetroot powder, which turns our white noodles a bright, purply pink. Combined with our togarashi red beets and blue tahini miso dressing, this salad is both pleasing to the eye, and good for them.
Pasta Arrabiata
This winter we invite you to cozy up to a Roman classic, Pasta Arrabiata. This sauce is marinara’s bolder, cheekier cousin, made with a little extra spice and a dollop of sweet, mild garlic confit to round it out. We are preparing our arrabiata with Chickapea’s penne pasta (perfect for holding onto every bit of sauce while providing a ton of plant-based protein) and roasted broccoli.
Bleu Pear Salad
Here at Thistle, we love to innovate (see our amazing Unicorn Salad, above), but we also like to riff on a beloved classic. Our Bleu Pear Salad is one such rendition, in which we take the tried and true pear, bleu cheese, and walnut combo and give it a dairy-free update. By roasting our pears, we create a tender texture and intensified flavor. Our buckwheat bleu provides a little sharp tanginess, while our spiced walnuts, which just so happen to be rich in antioxidants as well as folate, complete this flavor trinity.
African Peanut Stew with Black Eyed Peas
When the weather turns truly frosty, a substantial stew is what I crave. This winter, I will be tucking into our African peanut stew often. Our peanut-based recipe layers onions cooked in warm aromatics with fire roasted tomatoes for a rich and savory stew that is packed with protein and folate (which is great for heart and brain health).
Cauliflower Piccata Bowl
After indulging in rich holiday fare, I am usually inspired to seek out a lighter, savory palette cleanser. Our cauliflower piccata bowl definitely does the trick. Inspired by the classic chicken piccata, we are combining our seasoned roasted cauliflower with the bright, lemony kick of our garlic & herb sauce and earthy sauteed mushrooms. Looking for yet another reason to love cauliflower? While this vegetable is well known for its versatility and high fiber content, it is also rich in choline, an often overlooked nutrient that is essential in maintaining a healthy metabolism.
Elvis Smoothie
I can’t help falling in love with our Elvis Smoothie, inspired by Elvis Presley’s favorite peanut butter, banana (and bacon!) sandwich. Our peanut butter banana smoothie and banana chia pudding are a potassium-packed power couple (great for maintaining muscle and nerve function), but the crunchy addition of our candied (pinto bean) bacon granola rounds out this fabled Elvis sandwich combo and provides additional fiber and protein. I think The King would approve!
