Autumn is here, and the allure of crisp, warming flavors beckons! As much as I love to dive into all of summer’s offerings, I am always excited to transition into the full-bodied flavors of fall.

(Spoiler: I say this about winter and spring, too.)

Our 2024 autumn menu offers an exciting transition from hot weather favorites to cooler weather comforts, with lots of new flavors and our take on beloved classics.

New Fall Pastas for Comfort and Flavor

This fall, we are pleased to introduce two new dishes to our popular pasta meals, Pasta Fagioli and Lemon Hazelnut Pasta.

A Taste of Autumn in Every Bite: Pasta Fagioli

Our Pasta Fagioli is the very essence of comfort food. We combine rotini pasta and roasted broccoli florets with tender carrots and onions, then tie them together with our richly flavored Fagioli sauce, which combines vegetable stock, nutritional yeast, and creamy cannellini beans to make a satisfying and aromatic meal.

Light and Lively: Lemon Hazelnut Pasta

Our Lemon Hazelnut Pasta offers a lighter take on fall fare. Toasty aromatics from the hazelnuts, lemon and sage bring out the natural sweetness of the roasted butternut and brussels sprouts. If you are on the fence about whether you like Brussels sprouts or not, this is the dish for you. Amazing flavor aside, this cute little vegetable is low in calories, high in fiber, and provides a whopping 90% of your daily value of vitamin K, a nutrient essential for blood clotting and bone health.

Here at Thistle, we love a delicious, power-packed salad, and this season we have developed brand new seasonal salads that certainly fit the bill.

Bay Roasted New Potato Salad: A New Twist on a Classic

Proving that potato salad is not just for summer, we are thrilled to introduce our Bay Roasted New Potato Salad! Our friends at Oaktown Spice Shop have concocted my favorite spice blend to date, West Coast Bay Seasoning. It is the perfect blend of smoky and savory, with a hint of mustard. I can’t wait for you to try it! We are tossing our yellow and red creamer potatoes in this blend, roasting them until they are irresistibly tender, then combining them with pickled red onions and seasoned sunflower seeds for a pop of acid, crunch, and health-boosting antioxidants. 

Smoky Carrot & Herbed Buckwheat Salad: Flavor and Nutrition in Harmony

Our Smoky Carrot & Herbed Buckwheat Salad is another new lunch I can’t wait to share. We roast our carrots in smoked paprika for a deep, roasted flavor, and pair them with sweet roasted red onions, toasted sunflower seeds, and herbed buckwheat for a sensational autumn meal. Despite its name, buckwheat is not part of the wheat family, and contains no gluten. In fact, it’s a seed, and a cousin of rhubarb. What it does have is a nutty flavor, grain-like texture, and lots of fiber and magnesium (a heart health power couple). 

Cozy Up with Our New Saag Aloo

Our fresh take on Saag Aloo, a classic Indian spinach stew, boasts an incredible 5 cups of raw spinach. While the spinach reduces in volume once cooked, this meal still packs a massive nutritional punch. In addition to its vibrant color, the Saag base is crafted with warming fenugreek and coriander flavors. It provides iron, vitamins C and E, and lutein, which supports eye health. Tender potatoes and a tofu-based paneer round out this warming and indulgent meal. Swap tofu for roasted chicken for an extra 9 grams of protein!

Warm Up Your Mornings with Maple Butternut Baked Oatmeal

If breakfast is the most important meal of the day, I can’t think of a better way to start off a chilly autumn morning than with our new Maple Butternut Baked Oatmeal. Kathleen Nio, one of our amazing R&D chefs, developed this butternut-studded baked oatmeal that tastes decadent, but is also absolutely packed with nutrients. While oats provide the fiber to keep you feeling fuller for longer, butternut squash is an excellent source of vitamin A (which promotes eye and bone health, as well as immune function) and vitamin C. 

Treat Yourself with Our Chocolate Orange Mousse Cup

And finally, dessert! Our Chocolate Orange Mousse Cup is so indulgent, you may forget it is entirely vegan and gluten free. We use Joi’s cashew milk concentrate as the base for our orange mousse, which provides a rich, creamy texture. It also serves as a great source of Omega-3 fatty acids which are essential for maintaining brain health,  and tryptophan, which is a key ingredient in producing serotonin.
