If you didn’t order enough meals for yourself, forgot to double up on your meals this week, or have a surprise dinner guest who you want to feed, here are some hacks to make your Thistle meals work for two people.
- Super-size it - It’s easy to add a lot of different foods into a Thistle meal. Got extra garbanzo beans, tofu, kale, or spinach? Leftover quinoa or rice?
- Wrap it up - Because our meals are vegetable based, it’s easy to wrap them up with your go-to wrap and have a meal for two. Get two tortillas, divvy up the Green Grain Taco Salad, and wrap them up for a satisfying meal for two. If you have a few extra minutes, you can heat it up on the skillet for a nice crunchy wrap. Or if you have the Veggie Bibimbap or Caterpillar Sushi Salad, wrap it in seaweed or rice paper and slice it — now you have sushi-style rolls to dip into the dressing or soy sauce.
- Heat up stew for 2 - Take a dish like our breakfast Quinoa Ranchera, add in salsa and veggie broth, and you have a stew for two.
