Is it a healthy breakfast smoothie or a decadent pudding? Packed with protein and a rich chocolate taste - it's both.
Make the granola
Ingredients
1/3 cup sliced almonds
1/3 cup hemp seeds
pinch of pink Himalayan salt
2 tsp sunflower oil (or other neutral oil)
2 tsp maple syrup
1/4 tsp vanilla extract
2 tbsp freeze-dried raspberries (I used 1 tbsp of fresh raspberries instead)
Preheat oven to 300-325 degrees and line a baking sheet with parchment paper.
Toss all of the ingredients (except the raspberries) until well combined and then spread on sheet.
Bake for 15-20 minutes, stirring occasionally to mix everything up, until everything is golden brown. Let cool on the baking sheet so that larger granola clumps form, and then mix in the freeze dried raspberries, if using.
Make the smoothie
Ingredients
1 cup sliced banana (~1.5 ripe bananas)
1/2 cup + 2 tbsp cooked garbanzo beans
2 tbsp date syrup
1/4 cup cacao powder
1 tbsp sunflower butter
1 cup milk of choice (we love hemp!)*
3/4 tsp vanilla extract
1/8 tsp pink Himalayan salt
If you want a more liquid smoothie that you can sip through a straw, add the full 1 cup of your favorite milk. If you want it to be thicker and more pudding-like, omit the milk or just use a splash. Blend all of the ingredients in a food processor or blender until smooth and creamy.
Top it with the cooled granola.
