This crispy and clever snack consists of pasta that’s crisped up in an air fryer or oven and enjoyed with your favorite dip. Try them with our Sun-Dried Tomato “Cheese” Dip for a deconstructed vegan creamy tomato pasta dish.
Pasta Chips
Ingredients:
8oz - pasta (rigatoni, bowtie, or penne work best)
1 tbsp - olive oil
Seasonings:
- 1 tbsp nutritional yeast
- 1 tsp garlic powder
- 1 tsp Italian herbs
- 1 tsp salt
Dip to serve: We love dipping it in our sun-dried tomato "cheese" (see recipe below). But these chips are so good, any dip would pair well.
Instructions:
- Cook pasta according to package instructions until al dente and drain
- Toss pasta with olive oil and seasonings
- If using an oven, bake at 400F for 20-25 min or until crispy and lightly golden brown
- If using an air fryer, cook at 400F for 10-12 min
- Serve with our Sun-Dried Tomato “Cheese” Dip
Sun-Dried Tomato "Cheese" Dip
Ingredients:
1 cup raw cashews, soaked & drained OR 1 cup raw cashew butter
1/3 cup canned roasted red peppers
1/4 cup sun-dried tomatoes
2 garlic cloves
2 1/2 tsp nutritional yeast
1 1/2 tsp Italian seasoning
1/2 tsp salt
1/2 tsp garlic powder
3 tbsp apple cider vinegar
3 tbsp water
1 tbsp extra virgin olive oil
Instructions:
Soak the cashews in at 3 cups of water overnight OR bring 3 cups of water to a boil and pour over the cashews - allow to sit for at least 30 minutes.
In a food processor or blender, add all the ingredients and blend until smooth & creamy, scraping down the sides of the bowl about every 45 seconds or so.
Serve with pasta chips, fresh veggies, crackers OR use as a spread on a wrap or sandwich!
