Ingredients
Lemon & Coconut Energy Balls
1/2 cup shredded coconut
1/4 cup macadamia nuts
Zest of 1 lemon
Juice of 1 lemon
8 dates, pitted
1/4 cup cashew butter
1/4 tsp sea salt
1/4 tsp turmeric
Coconut & Lemon Topping
1/4 shredded coconut
2 tbsp dried lemon zest (we like Oaktown Dried Lemon Zest)
Directions
Using a food processor, combine the ingredients shredded coconut through turmeric and process until smooth, scraping down the sides as needed.
Scoop the cookie dough balls using a 1 oz scoop or 2 tbsp and hand roll them in shape so they are round and smooth.
Combine topping ingredients in a small bowl and toss to mix. Working one at a time, roll each shaped ball in the topping mix, coating all sides. Cover and set in the refrigerator to sit for at least 2 hours. Once chilled, they’re ready to enjoy!
