In less than 10 minutes, this easy veggie-packed Hearty Pesto RightRice Bowl will be on the table and ready to eat.

Ingredients
Garlic & Herb Infused RightRice - Yields 4 servings
- 1 package Original RightRice (7 oz)
- 1 1/3 cup (12 oz) - vegetable broth
- 3/4 tsp Italian seasoning
- 1/2 tsp granulated garlic
- 1/4 tsp salt
- Pinch of freshly ground black pepper
Sunflower Seed Pesto - Yields about 1 cup
- 1 small bunch, about 2 cups fresh basil
- 4 garlic cloves
- 2 tbsp sunflower seeds, shelled & untoasted
- 3 tbsp nutritional yeast
- 1/4 tsp salt
- 1/8 tsp black pepper, ground
- 3 tbsp lemon juice
- 2 tbsp water
- 1/3 cup extra virgin olive oil
Directions
- Bring the vegetable broth, Italian seasoning, garlic, salt & pepper to a boil
- Add in the entire package of RightRice, give it a good stir, remove from heat & cover for 10 minutes.
- While the RightRice is resting, make the Sunflower Seed Pesto:
Add all of the ingredients except the olive oil to a blender or food processor and blend until mostly smooth.
Scrape down the sides of the bowl, then with the food processor or blender running, slowly drizzle in the olive oil.
Continue to process until the oil has been completely incorporated and the pesto has a nice uniform consistency - as needed and continue to process until desired consistency.
- Taste and adjust for salt & acid.
