Everything Goes Burrito Bowl
Cook time: 20-25 minutes
Serves: 1 person
Ingredients
1/2 cup of your favorite roasted vegetables (our favorites are sweet potatoes or yams)
1/2 cup cooked greens (we love lacinato kale and spinach)
1/2 cup cooked brown rice
1/4 cup of your favorite salsa or pico de gallo
1/2 cup black beans (or pinto beans), cooked
1 small avocado, diced
1/2 jalapeño pepper, diced with seeds (optional)
1 tbsp non-dairy sour cream (optional)
1 tbsp non-dairy cheese of choice (optional)
Cilantro, for garnish
Lime wedges, for garnish
Directions
Throw it all together into your favorite bowl, garnish with desired toppings, tuck in & enjoy!
