Let’s start off a short intro—tell us a little bit about yourself. What makes you, well, you? No rules, no limits. Anything you feel like sharing so we can learn a little more about you.
My name is Jules and I’m a 30 year old woman who lives in San Diego, California. One of my goals in life is to scale smiles like one would scale a business. This comes from an obsession with making processes more efficient, as well as wanting to find a way to help people recover from the widespread social isolation of the last couple of years.
One of the ways that I give back is by helping to promote events in my neighborhood and to get residents connected to each other. Here’s my profile if you want to learn more or if you’re in the San Diego area: www.instagram.com/lemongrove_happenings/
I also help organize an informal pickle ball group for my neighborhood that’s steadily growing: www.facebook.com/groups/1456325724886232
Both of these groups are intended to help people connect and be active together.
I hope these give a little insight into who I am, since it’s currently where a lot of my mental energy and time are going. But if it’s not obvious, I care about health, community, and putting oneself out there to make a difference.
What city do you live in?
San Diego, California.
Why did you join Thistle?
I joined Thistle because I was looking for a solution to eating healthy, delicious, and environmentally friendly meals on a regular basis. I also need to be able to afford this solution, and Thistle was in my budget.
How has Thistle impacted your life?
So far, it’s given me peace of mind. I love knowing that at my lowest energy levels, I’m not going to be enticed into purchasing fast, processed food. At my best, my home meal prep salads would have four ingredients tops, not including dressing. My kitchen would be a mess, and I would ultimately not want to eat what I made. Your meals are filling, jam packed with a variety of nutrients, and it feels like I’m going to some bougie restaurant when I eat them.
We are honored that you choose Thistle to help you eat more plants. What does eating plant-based foods mean to you?
It means protecting the environment, animals, and my health!
We love empowering our Thistle Community with ways to make meaningful, positive environmental impact, big or small. What are some of your lifestyle practices to live a more sustainable lifestyle?
I’m a very active person, even though I have a desk job. There’s nothing more invigorating than doing some push ups or pull ups or a sprint up a hill! I’m also very social and try to find people to connect with around me. My ultimate life hack though is to buy a purse with a water bottle holder, so I’m always hydrated. Serious game changer.
What keeps you coming back to Thistle?
The life ROI! Not only does the food give me more energy, but I’m saving hours a week from having to do all that meal prepping myself. I’m guaranteeing my health.
What's your favorite Thistle meal?
I like the Burmese Khow Suey with Garlic Baked Tofu!
If you could describe Thistle in one word, what would it be?
Gentle.
