This year, Mother’s Day in the United States falls on Sunday, May 8, 2022. That means you have time to plan out a nice homemade lunch for her, with a meaningful card and must-have flowers. 

Imagine what it feels like to come home to a home-cooked meal, just like you might had every day in your childhood. You’ll make her day when you invite her over for a lunch where all she needs to do is relax and be her wonderful self.

Making Lunch for Your Mother This Year

We understand that you want to make your Mother’s Day lunch as perfect as possible because Mom deserves it. But there is nothing she will appreciate more than the act of you making her a meal with love.

1. Broccoli Cheese Soup

This plant-based Broccoli Cheese Soup with dippable bread is a perfect choice warm and creamy dish. Best of all for plant-based moms, this cheesy dish is completely dairy-free.

Making this broccoli cheese soup is not too difficult, which is great because that means you can spend more time with your mom. The most important part of this soup is the plant-based cheese sauce. 

To make this dish, you will need potatoes, onion, and carrots to be cooked for 15 minutes. Next, put this yummy mix in a blender with vegetable broth, cashews, nutritional yeast, paprika, cayenne, garlic powder, and salt and pepper. Once blended, it will be ready to go (and you can save extras in your fridge for tomorrow).

For the actual soup recipe, combine onions and garlic into a large saucepot and cook for 3 minutes. They’re all done once they’ve slightly browned. 

Add 2 ½ cups of water, broccoli, and carrots to the saucepot and cook for about 10 minutes. Once these are done, put half of the veggies into the blender with the cheese sauce and half a cup of vegetable water. Blend and put them back into the pot with the remaining veggies. 

Add almond milk, dijon mustard, and chili powder with salt and pepper to taste. Cook this for 10 minutes on low heat, and enjoy with your choice of bread. While this meal is delicious as leftovers, it’s unlikely that you’ll have anything left at the end of the meal. 

2. Southwest Sweet Potato Taco Salad

If your mother is a sweet and spicy kind of woman, you might want to toss together Thistle’s Southwest Sweet Potato Taco Salad for her. This is a relatively easy dish to prepare with many nutritious and yummy ingredients. 

The ingredients you’ll need:

  • Baby spinach
  • Shredded red cabbage
  • Cooked black beans
  • Hemp seeds
  • Grape tomatoes
  • Corn
  • Cilantro leaves
  • Scallions
  • Sweet potato with oil, lime juice, pink Himalayan salt, garlic powder, paprika, chili powder, and black pepper
  • Sunflower seeds
  • Plant-Based Chipotle Ranch Dressing

To make this Taco Salad, you will first need to prepare the sweet potatoes by roasting them at 375 degrees for 10 to 15 minutes with their skin on to get the most nutritional value out of your mean. Once they have cooled, you should chop them into cubes. 

In order to make a Plant-Based Chipotle Ranch Dressing, you will combine plant-based mayo, lime juice, water, tomato paste, nutritional yeast, garlic and onion powder, pink Himalayan salt, chipotle powder, dried parsley, dill, and chives. You will then blend all this to create a creamy dressing.

Once this is done, you put the bean and corn salad together, add in the greens, toss everything with the dressing, and add sunflowers to the top. This salad is great served cold, so don’t forget to keep it refreshed in the fridge before eating it.

3. Risotto With Asparagus and Peas

Who doesn’t love a creamy and comforting risotto for lunch? With a nice breeze and the sun coming in through the clouds, this risotto with asparagus and peas will surely impress your mother this year. This risotto is light and refreshing, making it a great side dish, while the peas are packed with plant-based protein. Of course, this can also be your main dish, too.

It’s springtime, meaning that asparagus and peas are in full force, and we should be using them whenever we can to gain all their yummy benefits

You’ll need:

  • Vegetable broth 
  • Olive oil
  • Medium yellow onion
  • Garlic 
  • Arborio rice (or rice of your choice)
  • Dry white wine
  • Lemon juice
  • Asparagus
  • Peas
  • Plant-based butter
  • Plant-based parmesan cheese
  • Salt and pepper

Heat the vegetable broth in a medium pan and leave it at a low simmer. At the same time, heat the olive oil in a large heavy-bottomed pan. Add garlic and onions and sauté for five minutes. Add rice to the pot and let it toast for one minute before turning down the heat. Next, add white wine and lemon juice until the white wine has dissolved almost entirely. 

Grab a ladle, and scoop the veggie broth into the rice, stirring until the liquid has evaporated. Do this until all of the vegetable broth is used, and the rice is thick. It could take more hot water than you in the broth, so keep in mind how fast the rice is cooking. Add the peas, asparagus, and butter when the last ladle has been spooned in. 

When the broth is evaporated, turn off the heat and add in the parmesan, salt, and pepper, serving it immediately with wedges of lemon and parsley. You will be going back for seconds, no doubt. 

4. Crunchy Thai Slaw Wraps
